"Quickie" lasagne--Can you say MMMMMMM?

It's the first game of the World Series and I wanted something hearty and All-American (and yes, homey Italian-ish lasagne is about as All-American as you can get). I also wanted to be sitting down to eat by the top of the third inning. This was made from ingredients in the pantry and fridge:

Fat spoonful of ground turkey (we keep it in the fridge for homecooked doggie dinner--if I wanted to stay veggie I'd either use Morningstar burger crumbles or a bunch of chopped crimini mushrooms and a little diced jalapeno or banana pepper).
Chunk of diced onion
Spoonful of diced garlic

Saute well. Add one can San Marzano tomatoes (no substitutions--and if you don't keep a few cans on standby in your pantry, you SHOULD!), mash the tomatoes with spatula into nice chunky sauce. Add fat pinch or two of Italian seasoning. Cook down a little and add bag of baby kale (or other greens).

Spread a little sauce in bottom of half-size casserole dish. Add one layer no-cook lasagne noodle, spread a little more sauce. Add layer of sliced crimini mushrooms. Add layer of cottage cheese and pat down into mushroom layer. Spread layer of thinly sliced crookneck squash. Lightly sprinkle shredded mozzarella and add layer of sauce. Lay down one more layer of lasagne noodle, rest of sauce, light layer of mozzarella, and a little shredded parmigiano/reggiano cheese.

Bake at 375 for about 45 minutes. Let sit for about 15 minutes while you fix the rest of the meal and pour yourself a glass of cabernet from the mini-box you picked up at Von's on the way home from work.



Enjoy. After you portion out the leftovers for lunch the next day, be sure to share the casserole dish with the dogs to clean out.
